elote loaded tots - recipe

base
- ½ a bag of your favorite tots (or fries, your choice)
- i used small disc tots, like the ones Dunkin has. but i think curly fries or steak fries would be great for this as well! definitely something with weight.
sauce
- 1 cup mayo
- 1 cup sour cream
- 2 tbsp lime juice
- ½ tbsp minced garlic / garlic powder
sprinkle on top
- corn off the cob
- handful of cotija cheese / queso fresco
- 1 tbsp tajin
instructions
- start your tots, you'll want them crispy!
- with 5 minutes left on the tots, start heating your corn
- i got a bag of frozen white kernel corn for this so the time may vary depending on your form of corn
- mix the mayo, sour cream, lime juice, and garlic together
- and that's the sauce! adjust the amount of lime/garlic to your desired taste
- construct the meal
- lay out the tots
- layer of corn on top of the tots
- add the sauce
- sprinkle the cheese and tajin
- ENJOY! (have a fork nearby maybe)

the recipe is pretty straightforward. make the tots, layer corn, sauce, cheese and tajin then BAM glory in your hands. i hope i'm not disgracing street corn with this remix. all i am is a girl with a big heart and a lot of random shit in her fridge.
to be honest, i haven't had elote on many occasions so this isn't like a secret family favorite. i mainly come across it when walking through street fairs in the summer. but it's always so expensive so i never get any. i just smell and dream. smell and dream…
BUT DREAM NO MORE SHALL I! i live across the street from a grocery store that has everything i need and a container of sour cream that'll go bad in a few days, it's basically fate. so i got some queso fresco cheese and corn and just started. the elote recipe is relatively the same no matter where i looked which was reassuring. i don't know why i was so convinced i was going to just fuck it up so bad somehow that sour cream, mayo, and lime juice would taste like absolute SHIT. i am very happy to say that it did not taste like shit, in fact, it was ABSOLUTELY DIVINE!!
honestly this can be made exactly the same, probably with an easier eating experience, if you use chips instead of tots. but where's the fun in that? i loved the potato with the sauce and corn, i think the flavor makes up for having to eat it with a fork to get a full bite.
