ultimate breakfast burrito - recipe
april 26, 2026
ingredients
- 2 palm sized potatos (feel it out)
- 2 cups of your breakfast meat of choice - diced ham is used today
- 4 eggs - i use two per burrito
- 2 large tortillas
instructions
- dice potatos and place them in a bowl of cold water, it helps them stick less to my pan usually
- let the potatos soak while your breakfast meat cooks, or wait 10-15 minutes if your meat is cooked already
- also take out the eggs at this point to make sure they're not too cold when you add them to the pan later
- use a medium pan on medium heat, adding a DECENT amount of butter to the pan
- add potatoes to pan, moving around in the pan regularly until they're fork tender. (they alway stick for me if I let them sit for barely 30 seconds at the start.)
- add the breakfast meat and veggies to the pan, warming them and combining them with the potatoes
- start a medium heat pan on a smaller burner for the eggs. when the pan is hot, add a good amount of butter then your eggs.
- cook the eggs however you want. I like to put onions in then crack the eggs on top, covering to steam on the top :)
- grab that tortilla! warm it and start constructing the burrito.
- lay the burrito seam down on a hot pan to sear it shut. necessary for a burrito that stays together!
- ENJOY!
welcome to my recent obsession.
eggs were buy one get one and so I got 72 eggs. what do you even do with 72 eggs?
EVERYTHING
my bf and I get burritos from this ghost kitchen sometimes and they're so perfect when you're hungover. but they're also $40 for delivery ugh. And when you have 72 eggs in your fridge, you can't justify $40 delivery burritos.
so I make my own burritos! i like to think practice has given me consistency, yesterdays burrito was pretty bomb as well.
this is my first blog post that im not bring over from my wordpress blog, it's all being drafted in the html oooo. it's more work when im doing the recipes since I don't usually write in giant paragraphs. i think it'll be smoother for my All Her Fault review. that WILL be in longer paragraphs loll
that's all i've got to share right now though. I'm hoping to find some fun graphics to add to my blog, give it a personalized FLARE. then ill add my shrines like ive seen on other ppls blogs hehe
